1. Egg Wrap 🥚🌯


Ingredients:

1 large egg

1 small tortilla wrap

A pinch of salt

1 tablespoon of shredded cheese (optional)

1 tablespoon of chopped veggies (optional)


Instructions:

1. Whisk the egg with a pinch of salt and cook it in a non-stick pan.

2. Lay the tortilla flat, add the cooked egg in the center, sprinkle some cheese and veggies if desired.

3. Roll up the tortilla and pack it in your kid’s lunchbox. Simple, quick, and healthy!


2. Mashed Potatoes and Gravy 🥔


Ingredients:

3 large potatoes

1 tablespoon butter or margarine

1/4 cup milk

Salt to taste

Ready-made gravy (optional)

Optional: bits of chicken or veggies for added flavor


Instructions:

1. Peel and chop the potatoes into small cubes. Boil them until soft.

2. Drain the water and mash the potatoes with butter and milk. Add salt to taste.

3. Serve with gravy on top or mix in small pieces of cooked chicken or veggies for added nutrition.


3. Rice and Veggie Stir-Fry 🍚🥕


Ingredients:

2 cups of cooked rice (white or brown)

1 small carrot (grated or diced)

1/2 cup peas or corn

1/4 onion, finely chopped

1 tablespoon vegetable oil

A pinch of salt

Optional: small pieces of chicken, fish or egg for added protein


Instructions:

1. Heat the oil in a pan over medium heat.

2. Add the chopped onion and sauté until soft.

3. Toss in the veggies (carrot, peas, or corn) and stir-fry for 3-4 minutes.

4. Mix in the cooked rice, add a pinch of salt, and stir until everything is well combined.

5. You can add scrambled egg or cooked chicken for more nutrition.


4. Plantain and Bean Porridge 🍌🥣


Ingredients:

1 ripe plantain

1/2 cup cooked beans (black-eyed or kidney beans)

1 tablespoon palm oil or vegetable oil

1/4 onion, chopped

Salt to taste


Instructions:


1. Peel and dice the ripe plantain into small cubes.

2. Heat the oil in a pot and sauté the onion.

3. Add the plantain cubes and cooked beans, then add a little water and salt.

4. Cook for 10-15 minutes until the plantains are soft, and everything is well mixed.
