- 1/2 lb Goat meat (cut into cubes)

- 2-3 tablespoons Ground crayfish

- 2-3 tablespoons Ground pepper (adjust to taste)

- 2 seasoning cubes (Optional or adjust to taste)

- Salt to taste

- 2 cups Stockfish or Iced fish (optional) or any protein of your choice 

- 2 cups ponmo (cow skin)

- 2 tablespoons of iru (locust beans) fresh or dry 

- 2 cups Spinach or Ugu leaves (for garnishing)

- 6-8 cups Water or beef stock (adjust as needed)


Instructions:


1. Prepare the Meat: In a large pot, add the beef, goat meat, shaki, and stockfish (if using). Season with salt, seasoning cubes, and a portion of the chopped onion. Add enough water to cover the meat and cook until tender.


2. Cook the Egusi Paste: In a separate bowl, mix the ground Egusi seeds with a little water to form a thick paste.


3. Add Palm Oil: Heat the palm oil in a large pot over medium or low heat until it starts to bubble. Be careful not to burn it.


4. Combine Ingredients: Add the remaining chopped onions to the palm oil and sauté until translucent. Stir in the Egusi paste and cook for about 10 minutes, stirring occasionally to prevent burning.


5. Incorporate Meat: Add the cooked meat and stock (from the meat) into the pot with the Egusi paste. Stir well to combine. Let it simmer for about 15-20 minutes, allowing the flavors to melt.


6. Season the Soup: Add ground crayfish, add your washed iru (locust beans), ground pepper, and additional seasoning cubes to taste. Stir and cook for another 10 minutes.


7. Add Vegetables: Add the spinach or Ugu leaves and cook for an additional 5 minutes until the leaves are mildly tender. Egusi soup is ready 


8. Serve: Serve hot with your choice of side dishes.
